Well the spare man at the back thing isn't exclusive to Bielsa. It's really built into the tactical reasoning of a 3 man defense. Remember that Bielsa also uses a back 4 when he faces a one striker system. It's all about flexibility with him.
Back to Gasperini. He is like Bielsa in that he is very attack minded. So it's more of a true 3-4-3 rather than a 5 man defense, though the two wide midfielders do have significant defensive responsiblities.

I don't feel that team without Zanetti. I'd replace Samuel and play Zanetti as the third center back.
