If we buy players we just transfer them onto that team on our profile, right?

Yes, I'll be making an official squad list for all teams and keeping that updated.

If your transfer is confirmed (by posting it in the Inactive/Active transfers thread) and both managers have agreed on the deal (or just you if it's buying from an inactive team) then you just use team management on FIFA 11 and edit them into your team.
